材料:
高筋麵粉 | 300g |
牛奶 | 130g |
雞蛋 | 1個 |
糖 | 40g |
鹽 | 2g |
酵母 | 3g |
無鹽奶油 | 30g |
無糖可可粉 | 7g |
融化巧克力 | 適量 |

小熊手撕麵包做法 Cute Bear Pull Apart Bread Recipe
小熊手撕麵包食譜 做法步驟:
- 將高筋麵粉、酵母、糖、鹽、雞蛋及牛奶放入盆中,開低速揉成團。
- 加入室溫軟化的奶油,繼續揉至出現薄膜即可(不用手套膜)。
- 將麵團分成兩份,一份麵團先蓋住,另外一份加入可可粉且揉均勻(太乾就加點水,或先用水跟可可粉混合再加入麵團)。
- 兩個麵團第一次發酵,室溫28度,發酵40分鐘。
- 40分鐘後,兩個麵團各分出36克小麵團(做耳朵)。
- 剩下的麵團,各分成8份(總共16份)。
- 拿出其中一個做耳朵的麵團,分成16個小麵團。
- 拿出8吋烤盤且鋪上烘焙紙,把麵團依序放入烤盤。
- 再將剛剛分好的小麵團,沾點水黏到麵團上當耳朵。
- 組裝完畢後放入溫暖的地方發酵25分鐘(烤箱內放杯熱水)。
- 烤箱預熱170C烤20-25分鐘,烤到表面顏色為自己喜歡的就可以蓋上鋁箔紙。
- 出爐後放涼,接著可以用融化巧克力畫眼睛嘴巴,如果覺得沒畫好,可以擦掉重畫。
- 這樣子小熊手撕麵包就可以享用囉~
How to make Cute Bear Pull Apart Bread?
- Put bread flour, yeast, sugar, salt, an egg, and milk into a stand mixer bowl. Set a mixer to a slow speed to knead the dough.
- Then add room temperature unsalted butter in it, and knead until it could easily be stretched.
- Separate the dough into two. One dough is covered with plastic wrap at first, another dough mixes well with cocoa powder. You can add some water if the dough is too dry, or mix water with cocoa powder, then mix it well with the dough.
- Then, Raise the dough for 40 minutes at 28C room temperature.
- After 40 minutes, separate two small doughs (36g/each) from the two doughs.
- Divide each dough into 8 portions (16 total).
- Take one small dough that I divided before, and divide it into 16ea small dough (ears).
- Take an 8-inch cake pan with parchment, and put the dough into it.
- Dip some water with the small dough that has just been divided and stick to the dough as ears.
- Raise the dough for 25 minutes in a warm place.
- Baking in a preheated oven, 20-25 mins. If the color becomes golden, then cover with aluminum foil.
- Wait for the bread to cool and paint the bear’s eyes and mouthes with melted chocolate on the bread. If you feel that the painting is not good, you can erase it and repaint it.
- Enjoy.

- 揉出薄膜即可,不用手套膜。
- 當天沒吃完就放夾鏈袋且放冷凍,隔天要吃再用沾溼的廚房紙巾蓋住麵包,微波一分鐘,依然柔軟好吃。

- How to store the bread? Just put the bread into a Zipper bag and froze it. Cover with a wet paper towel and microwave for 1 minute before you eat.
