蔥花捲食譜 Steamed Scallion Buns Recipe。家裡院子的蔥收成良好,我除了用來做蔥抓餅外,還用來做其他加蔥的小點心。大量的蔥讓我想起蔥花捲,這是我小時候的回憶,想來想去倒不如自己來重現吧!

I got a lot of scallion from my courtyard. I made scallion pancakes before, but I thought maybe I could make more scallion snacks. I remembered that I ate steamed scallion buns when I was a child. Then, I made it. Follow my Steamed Scallion Buns Recipe and try it out.

小時候住家附近有間包子饅頭店,我當時最喜歡豆沙包、肉包及蔥花捲,想起來還真是懷念。院子裡的蔥不斷收成,感覺如果不做點什麼,冰箱的蔥都要滿出來了。決定先來做個蔥花捲,吃不完還可以放冷凍庫,早上只要丟一顆進電鍋蒸,刷牙洗臉後就有早餐吃了。

題外話:我真心推薦種蔥給不是綠手指的人(如我一般的人)。種蔥大概是目前我在種植物這件事情中得到最大的成就感,畢竟連仙人掌都會被我種到掛掉,蔥竟然可以活得超好且幾乎每兩週都可以讓我收成一次,蔥生命力根本超強(一定不是我照顧得好,完全是他們自己堅強)。

There was a store near my house when I was a child. I miss it a lot, especially their products, like bean buns, pork buns, and scallion buns. I got a lot of scallion from my courtyard, a few weeks ago, then, I decided to make scallion buns.

蔥花捲食譜 Steamed Scallion Buns Recipe

材料:

中筋麵粉…500g

酵母…5g

…250g

…10g

…20g

蔥花…1

白胡椒粉適量

五香粉適量(可省略)

Ingredients of Steamed Scallion Buns

500g All purpose flour

5g Yeast

250g Water

10g Sugar

20g Oil

1 bowl Scallion

White pepper powder

Chinese five spice powder (you can omit)

蔥花捲食譜

蔥綠先切成蔥花備用,五香粉是我最近的新歡,可以省略。

Minced the scallion. If you don’t like or don’t have Chinese five spice powder, you can omit.

蔥花捲做法

拿一個盆子,把水倒入盆中,接著倒入酵母,稍微攪拌一下。

Poured the water in a bowl, then poured the yeast in it and stirred.

倒入糖及麵粉並且攪拌一下。接著就是用手揉成不黏盆不黏手的麵團,蓋上保鮮膜鬆弛10分鐘。

Added the sugar and flour into the bowl, and stirred the mixture, then kneaded dough with heads that until not sticky. After that, covered with plastic wrap, then, resting the dough for 10 mins.

中式麵點食譜

等麵團鬆弛10分鐘之後,把麵團移到桿麵墊上頭,撒上些麵粉防沾,把麵團桿平成方形。

桿平後刷上油,撒上大量蔥花、適量的胡椒粉及五香粉。

Put the dough on a pad and sprinkled a little flour. Then, use a rolling pin to flatten the dough, and brushed with a layer of oil. After that, sprinkled the scallion, white pepper powder, and Chinese five spice powder (you can omit).

蔥點心做法推薦

接著把麵皮捲起成長條形,最後收口要稍微壓一下。

把麵團切成等分小塊,每塊寬約3-4公分。

Rolled up the dough and grew into a strip. Cut the dough, 3-4 cm each width.

蔥花捲食譜

拿起切好的兩小塊麵團疊在一起,用一根筷子壓一下,稍微拉長,用筷子放在底下輔助捲起(這邊建議看影片解說比較容易,影片請點我)。

全部都捲好之後,放到溫暖的地方發酵30分鐘,再蒸10-15分鐘,如果是用電鍋就是外鍋一杯水,開關跳起即可。

After that, leaved the doughs in a warm place to rise (30 mins). Then, steamed for 10-15 mins.
